Homemade Pizza - Have it Your Way!

Kids definitely do love pizza! When I was a kid, there were not as many pizza places as there are now. There were mostly small Mom & Pop pizza parlors or the local bowling alley. My Mom would bring home Alex's pizza for dinner maybe once a month and it was a treat. There were no square cardboard boxes, they used these hard paper plates, one for the bottom and one for the top - it kind of looked like those individual serving covers room service at hotels use. There was only one size and a limited number of toppings - but it was always delicious!
Try making a homemade pizza from scratch at home one night and see what combination of toppings you can use from your fridge.
CHEESE & TOMATO PIZZA
Ingredients:
- 3 cups flour
- 1 package quick ride yeast
- 2 1/2 tsp. salt
- 2 tsp. sugar
- 1 cup warm water
- 2 Tbsp. olive oil
- 1 tsp olive oil
- 4 ripe tomatoes
- 3/4 lb mozzarella cheese
- 2 Tbsp olive oil
- salt & pepper to taste
Directions:
- mix 2 1/2 cups flour, yeast, salt and sugar in a bowl
- add warm water ( 115-125 degrees Fahrenheit) and 2 Tbsp olive oil to flour mixture and stir until a dough ball forms
- use 1/2 cup of flour to dust a work surface
- knead dough until no longer sticky and is smooth - about 10 minutes
- grease the inside of a bowl with 1 tsp olive oil, put dough ball inside and cover bowl with plastic wrap
- put in a warm spot and let dough rise until it has doubled in size - about 45 minutes
- preheat over to 425 degrees Fahrenheit
- slice tomatoes and grate mozzarella cheese
- put one half of the dough ball on to floured surface again and shape into a 9" x 13" rectangle
- put on a foil lined baking sheet
- drizzle the pizza crust with 1 Tbsp olive oil, arrange half of the tomato slices on top and then sprinkle with half of the cheese
- you can add additional toppings of your choice
- bake the pizza on lowest rack in oven until the crust is browned and cheese is bubbling - about 20 minutes
- make the other pizza while this one is baking
- enjoy!
