Homemade Ice Cream Sandwiches

I scream, you scream, we all scream for ice cream! Have lots of fun making these homemade ice cream sandwiches and even more fun eating them. What a wonderful activity for your kids and a special treat for an afternoon snack.
Homemade Ice Cream Sandwiches
Ingredients:
- 1 Tbsp. soft butter
- 3/4 cup butter
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups sugar
- 3 eggs
- 2 tsp vanilla extract
- 1 1/2 cup flour
- pinch of salt
- 1 quart chocolate chip ice cream, softened
Directions:
- preheat oven to 350
- line bottom and sides of 9" x 13" pan with aluminum foil
- lightly grease foil with soft butter
- melt 3/4 cup butter in pan over medium heat
- remove from heat
- add cocoa powder and whisk until smooth
- add sugar and whisk together
- let cool for 2 minutes
- spread evenly in pan
- bake about 20 minutes or until a toothpick comes out clean
- let cool completely
- lift from pan and remove foil
- cut into desired sizes
- spread ice cream about 1 inch thick on a piece and top with another piece
- press gently
- wrap in foil
- freeze until hard
You can substitute your favorite ice cream flavor.
