Healthy Basics - A Cheese and Herb Omelet

Omelets are great for breakfast or lunch. We sometimes have what we call in our house a "breakfast dinner". Eggs aren't just for breakfast anymore. Here is an easy recipe for a quick omelet for a hot breakfast for your kids before school or a quick lunch.
Cheese and Herb Omelet
Ingredients:
- 2 Tbsp. cream cheese, at room temperature
- 1 Tbsp. chopped fresh chives, thyme, basil or parslet
- 2 eggs
- 1 Tbsp. water
- salt
- pepper
- 1 Tbsp. butter
Directions:
- mash together with a fork the cream cheese and herbs in a small bowl
- in another bowl, beat eggs, water, pinch of salt and a pinch of pepper until blended
- melt butter in pan over medium heat
- pour the eggs in and use spatula to lift edges so that the raw eggs run underneath to cook
- when no longer runny, add cream cheese & herbs to half of the omelet
- fold the other half of the omelet over on top of the cream cheese side
- remove from heat and is ready to serve
